Just need one to start. Maybe two if they were smaller? Last private dinner like this was alligator and it ended up being two smaller ones. Delivery would be ideal but pick up within a reasonable range can be arranged. Definitely processed, but whole carcass, not individual cuts.

Large truck backs up to the house and unloads two enormous ostrich cascaras, and like that another satisfied OB customer was served.

Awesome. The closest we found so far was Lubbock. Austin Co. would be an easier day trip.

Life has been busy....I've had the necessary scoping discussions for how this has to happen. It'll be going to a restaurant so it isn't exactly easy...thanks .gov. I'll reach out to your contact shortly. Thanks so much for the intro.

A cook will be a little ways off if it even happens. If it does it'll be a lot of fun in DFW and I'll definitely provide notice here.

We had a lawyer where I grew up in west Texas get snookered into buy and setting up an ostrich ranch he sunk like 200K into it with two adults and about 15 chicks. First big west Texas thunderstorm and the female and all but two of the chicks dropped dead from heart attacks and the male killed the remaining chicks when they got loose into his pasture. He cut up and BBQ'd the male. It was okay.

was on a deer lease after college outside San Angelo. They had some free roaming Emu. Ranch manager said to shoot as many as we wanted. We asked about the meat. He said "well them Emu are a lot like our West Texas women....all thigh and no breast"

Like I said, this'll be a restaurant special if/when it happens. Said restaurant has dealt with a pandemic that closed most of their operation for ~12 months, an ice storm that collapsed a brick wall into their patio, a patio expansion project, a divorce, and the square is undergoing a full rebuild including the street/sidewalk in front of the place. Sidewalk was poured this week.

I think we can still make this happen. I'll touch base on it. Definitely still have to clear the square construction and the porch permitting. Likely into the spring if I had to guess.

I was just thinking it's been a while since you bumped this thread. I sent my buddy a text just now to see if we can shake that loose.

It's been a while since we discussed sourcing one, so if anyone knows a source closer to DFW that'd be helpful. Emu would be an acceptable alternative.
