So we went by the Chapline distillery on Blanco Road north of San Antonio today. They had two bourbons for sale or taste, both called "critical batch" bourbons. Mike Chapline, the owner is a retired submariner and critical batch is apparently a nuke term they use. The "straight bourbon" is a bourbon made to their specifications in Kentucky and aged 2 years. The "Texas Bourbon Whiskey" is a bourbon they make on site and is aged about 4 months. They are in the process of doubling their production and branching out in their distribution and sales. They sell neat pours, and a few different mixed drinks, as well as a Limoncello and a bourbon vanilla for baking. We tried the straight and the Texas bourbons and ended up buying a bottle of the Texas. Both are single barrel cask strength (55%abv 110proof). The Texas was smoother and a bit more mellow than the straight bourbon, but the straight was a bit sweeter. Mike bottled and sealed our bottle while we were there from a barrel first opened today. It isn't cheap, $63/ bottle, but for a quality hand made (Mike and his family work six days a week making the bourbon onsite) cask strength single barrel bourbon in today's market, it is a reasonable price for what you get.

They are open for happy hours on some fridays (check their Facebook page) and from 12-5 on Saturdays. They had free cookies, chocolate pie, and chili when we were there on a Saturday. I would encourage y'all to give them a visit and a taste.

Building a house out that way and drive by it all the time. Been thinking about making a stop by and probably will now. Thanks for the post.
