Don't know about y'all, but I can eat breakfast tacos almost whenever. Was wondering if y'all have any variations that you like

For example, when I'm trying to be kinda healthy I'll cook up some soyrizo(for flavor), mushrooms, and spinach (or even chopped up zucchini), and then scramble eggs into it. Eat it with guacamoles +/- salsa. Will put on tortillas if I plan on working out that day, or already did. Otherwise I skip the extra calories.

Breakfast tacos simply aren't the same for me anymore after I had them on home made tortillas and with refried beans. After that, add whatever floats your boat. Eggs, cheese, chorizo, bacon, etc. But the beans take it to a new level.

Kinda like AustinCountyAg with his cheese, I go through phases with beans. Sometimes i have to have them, and then sometimes I don't want it at all.

My go-to is Barbacoa and potato, especially if there's a mexican potato option (some places call them 'angry potatoes' or whatever, but just a spicy potato.)

Chicharron en salsa is my absolute favorite, after that I am a bean/chorizo (no cheese) or bean and egg guy.

As with all tacos, the key is the tortilla. It the tort is good, then the taco usually is, if it sucks then it is gonna be bad.

I'll turn leftovers of darn near anything into breakfast tacos on the weekend. That's my secret. You know what makes awesome breakfast tacos? Chinese food, reheat it in the pan, add your eggs, some hot oil or sriracha, drop it in a tortilla, and you win at breakfast.

I'll make tortillas using Almond flour still use lard. Then for me it making eggs a la Mexicana style, adding some bacon, refried beans, cheese and homemade hot sauce. Perfect Keto taco.

You'd be surprised. I know lots of people that like soyrizo more than chorizo. It's surprisingly good.

No, it's not. Without a tortilla it isn't a taco. You can call eggs, fake sausage, zucchini, and spinach a taco all you want but expect to get laughed at when you tell someone about your home made breakfast taco.

I have eaten tacos, breakfast and otherwise, from Brownsville to Tapachula and many points in between, and I have never seen spinach in a taco. Now, Mexicans will make dishes or mixes (guizos) with acelgas and verdolagas, (chard and purslane) and make tacos out of them. I have had eggs a la Mexicana with purslane in them before and it is good. Also chicharron and pork in sauces.

I like to make bacon... then fry an egg in the bacon grease... cover with cheese as the egg is firming up. Bacon, cheese covered egg, green salsa...TORTILLA!!! Heaven.

I used to agree with this until I got a taco at the Donut Palace in Lampasas on a work trip years ago. I asked for a potato and egg. Lady got up, grabbed a taco wrapped in wax paper, popped into microwave, voila. That taco was tossed from the window before I left the city limits.

Left over pork belly burnt ends - diced. Sautee then scramble in the eggs and a sprinkle of the rub used to make the PBBE.

Serve on flour tortilla with diced green onion and salsa (or not) of your choice.
Staff - take out the trash.

My favorite is when we have leftover BBQ from the previous night. I dice up the brisket a bit along with some bbq sausage leftovers as well, warm up some HEB bakery tortillas, some scrabbled eggs and SHARP cheddar.

The breakfast taco at the Chisum Travel Center in Roswell, NM was surprisingly ok. I expected it to be dry and boring but the potatoes egg and cheese actually had good flavor/texture, considering it was wrapped in plastic wrap and sitting under a heat lamp.

The absolute best breakfast tacos I've ever had are at Valentinas. Real Deal Holyfield (huevos rancheros, papas, bacon, refried beans on a homemade tortilla with a slice of moist brisket) and the Ultimate Bean & Cheese (B&C with bacon and brisket).

Made some the other day with leftover hashbrowns, fried chicken, queso from a mexican restaurant, and then the usual assortment of bacon/eggs

Any taco with beans is ruined

Good tortilla is the key - has to be warm, soft, not too thick and cooked enough. Eggs, bacon, breakfast sausage, chorizo, brisket, pulled pork...whatever. Cheese or no (I prefer monterrey jack myself), good salsa.

Don't overcook the eggs. That will take the taco down several notches.

Bacon, bean, huevos al la Mexicana, cheese, "medium" green salsa, homemade flour tortilla.

If in College Station, order this at La Famillia, Barron Rd at the bypass. (While you're there get a pork verde taco or two.)

Thank me later. Don't try to eat this in the car, they're messy.

I don't eat eggs, so my choices are somewhat limited.

Bean, bacon, cheese w/pico is my go to.

I love picadillo , but it's tough to find.
