Going to do roasted prime rib and horseradish mashed potatoes for New Year's Day. Any suggestions for some kind of greens or other side dish to go with this? Green bean casserole is not an option. lol

I recommend a retro avocado green side dish. Or maybe feista ware's green is more your speed.

Brussels sprouts are a nice for a different texture. I just half them and sear them in a pan with brown butter and a bit of lemon juice

Or creamed spinach/kale but with mashed potatoes that's a lot of similar texture

Appreciate all the responses. I should have specified that I'm doing a closed oven prime rib so the oven will be unavailable. Has to be something done on the stove or a cold side.

Collard green gratin. You can put it in the oven after you take out the roast and let it rest.

Roasted broccoli is probably my favorite veggie these days. Cut up fresh broccoli and toss with olive oil, salt, pepper, and garlic powder. Roast at 400 for about 20 minutes. Delicious and very little effort.

Roasted asparagus wrapped in prosciutto is another good one.

The difference is I've never had an over cooked Haricots Verts. And have only had over cooked green beans

Thanks again for all the responses. Decided to go with the recipe below or possibly, if the weather allows, grilled asparagus with a lemon garlic vinaigrette.
