Beef back ribs = spare ribs of beef

My local Costco sells beef back ribs for $3.99/lb. They're the ribs that come off the ribeye. You can smoke these to tenderness and have some excellent meat. It tastes like smoked chuck roast on a rib IMO. Pretty dang good.

I rubbed mine with a typical beef rub. 8 parts black pepper, 3 parts lowry's, 3 parts kosher salt, 1 part granulated garlic. Used a mixture of pickle juice/mustard so the rub would stick, which this cut needs. Smoked at 275 on my kamado until poking like butter with a digital thermometer. Anyone have experience with these? Maybe cooking them to a little less tender would yield a more preferable texture, but I'm happy with these regardless.

You may be paying for bone, but the meat that's on the bone is so RICH that one was all I needed for a weeknight dinner. Plus I think there's some value added for eating beef like a caveman

This is promising. I have a pack that came with my 1/4 cow this year and have been thinking about smoking them on my KJ

They're an easy cook because you can do everything from grilling over direct heat to smoking low and slow. Since you're spending most of your money on the bones, be sure to save them and make stock.

I love beef back ribs. Bought my first rack from Costco the other day. Plan to do them this weekend. They look great.

No easy way to ask this...Do you have any issues with making stock from bones you've eaten off of? I've always been a little touch and go there. I'm not making sweet sweet love to the bones or anything but I am putting my mouth on them.

Nope, and no offense taken. They go into a pressure cooker right away that's going to kill any possible thing that could be on them. That said, I wouldn't freeze them and then make stock later.
