My local Costco sells beef back ribs for $3.99/lb. They're the ribs that come off the ribeye. You can smoke these to tenderness and have some excellent meat. It tastes like smoked chuck roast on a rib IMO. Pretty dang good.
I rubbed mine with a typical beef rub. 8 parts black pepper, 3 parts lowry's, 3 parts kosher salt, 1 part granulated garlic. Used a mixture of pickle juice/mustard so the rub would stick, which this cut needs. Smoked at 275 on my kamado until poking like butter with a digital thermometer. Anyone have experience with these? Maybe cooking them to a little less tender would yield a more preferable texture, but I'm happy with these regardless.
You may be paying for bone, but the meat that's on the bone is so RICH that one was all I needed for a weeknight dinner. Plus I think there's some value added for eating beef like a caveman
