Sauted Kale

Never done it, but my neighbor swears by it and my kale in the garden has gone wild. Anybody with recipes or hints they'd like to share? Can it be sauted and creamed like spinach?

Sauteed kale usually isn't that great because bitter greens don't handle high heat very well unless you can almost burn them. Creamed spinach with some kale thrown in would work well because fat (in the cream) loves bitter from the greens. I know they're cliche, but homemade kale chips are great as well. I also like to do a raw kale salad where I work olive oil into the leaves, and then hit it with a splash of lemon juice and lots of fresh grated real deal Parmesan cheese.

Kind of depends on the kale. The curly kale is maybe too fibrous but the smoother leaf kale would probably work fine for either

we do it a lot. it doesn't break down like spinach, so you can't do creamed kale.

but it definitely softens. we like to saute garlic in EVOO then remove garlic and use that oil to saute the kale.

I also had it at a restaurant recently where they mixed kale and mustard greens... it was really good

Saute kale in olive oil. It makes it much easier to scrape off into the garbage.

I like it. Usually I serve it as the greens with my red beans and rice so I will start with some trinity and garlic, sweat it down a bit then throw the Kale in. Cook it for a bit then serve over rice with the beans.

I make a version of this but sometimes substitute andouille.

Bacon works better…you eat the bacon and then the bacon grease enables the disposal of the kale
