Amazon Prime has a documentary about the mob in Vegas that is pretty good. I think it was made in the early 90s, so it's dated but has a lot of good footage about the mob building Vegas.

There is also a good podcast called Mobbed Up on the same topic.

The Mob Museum in Vegas is legit. Downtown just a block or so off the Fremont Experience area. It covers the mob origins and then the movement west and the building of LV. Cool interactive stuff. Spent a couple of hours there and will definitely go back. The women had a spa day and the guys went downtown for this.
