I love love love Nels Cline's solo that is basically the second half of the Wilco song Impossible Germany.
Since you said outros I would say Freebird is a good 4 minutes of awesome guitar solo and some drums outro!!!

Lots of great ones, but Hitch a Ride is the one that moves me the most.
One most people wouldn't think about: Elliot Easton's solo at the end of "Bye Bye Love" - simple and understated. This also happens to be my favorite Benjamin Orr vocal - I like how he ups the intensity on each verse.
Rick had many that are on my list (sultans of swing, Rosanna, stone in love). I will add another Journey song, who's crying now, ZZ Top's rough boy, and The Eagles I Can't Tell You Why.
