The first thing to came to mind here is any number of fun songs from Bob's Burgers.
But I think the best has to be 'Rains of Castamere' from Game of Thrones.
Has to be one of the best TV soundtrack songs that isn't either a cover of an existing song (like a lot of the Westworld music) or the theme song to the show. Several different versions of it come up throughout the show. And it actually does have lyrics.

Not sure it fully meets the criteria, but if I remember correctly they only showed the full version once, then used a truncated version for the intro before it was changed to Cleveland Rocks. So awesome! I miss this show - wish it was in syndication somewhere.
