I am hoping someone can help me. I have a Dell laptop and would like to connect 2 monitors and have an extended display (not duplicate). Would a USB-to-HDMI adapter work for this? Updating link to the adapter I ended up buying and that worked.

As long as you're not doing anything too graphic intensive, yes the USB to HDMI adapters will work on Windows.

I've used this one and know for sure that it works:
