I've used my dji p3p to fly out baits in galveston, it's nerve wracking. Neighbor down there dunked a few then got a waterproof fishing-specific one, but if you dunk that you better hope it tangled in your line so you can reel it in. On mine, i used a basic plastic outrigger clip hung from paracord centered under the skids, a loop of light mono (like 4lb) from my bait to the clip, then on my big surf spinning rod open the bail and launch the drone from about 10 feet in front of where you have the rod propped up. Take er straight up, then out to the color change, take a deep breath, close the bail and give a jerk while it's still flying away, and hope it released. Mine will carry a whole blue crab with like a 4oz surf weight. Helps to have a friend to man the rod/reel. Put a towel over your head and screen to help with glare, and practice in a field or up the beach before you try over water
Edit: wonder if an r/c boat is a cheaper and more forgiving option for you where you're not dealing with waves? Could just have it pull a sled with your bait/rigging on it
