Is that because you've been out there with the smoker all day long and your mouth and nose are just deadened to the smoke when you eat it the same day?

I think it's a bit of you've been in the smoke so your tastebuds and nostrils are a bit worn out.

But I also think it's some of that sharpness mellowing and creating a bit more umami and depth of flavor. Same as gumbo, chili, or a good Italian red sauce tasting better the next day.
