We had an old ranch hand at our old Mexico lease who would clean them and take certain cuts to keep. It's been a few years but I remember him hammering the meat on a concrete slab a certain way. He would take a cooler home on Sunday when he went to visit family.
They were always happy to see us arrive with steaks, fish, shrimp, and all kinds of supplies they needed each hunting season.

javelina is good if you can keep the musk of the meat. have to cape it out. clean your knife before cutting into the meat.
