HEB - Tri Tip?

Piggybacking off the ribeye PSA, my local HEB quit carrying tri tips! Is this statewide?

The next closest meat market for me is 20 miles up the road.

where does the tri-tip go if a butcher won't sell it? can you ask the butcher to just pull the primal part of a sirloin for you and ring it up as sirloin? are all the sirloins delivered to the store with the tri-tips already removed? did the beef companies (or did Butt family/ corporate office) find a bulk buyer with higher price for all the tri-tips?

Did they for sure stop carrying it or do they just not have any? My HEB didn't have any out one time so I asked, and the guy came out with about a half dozen to put out.

My HEB doesn't usually carry outside cut skirt steak but the butcher added some for me on his next order and told me to pick it up a few days later. Maybe that's an option?

if you dont request tritip cut, it joins the ground beef bin

interesting. i just assumed that tri-tip cut was a popular and expensive enough cut that it would not be used for ground beef anymore.

I'm sure that's changing since this California brisket has more widespread popularity. But in my limited experience with butchering show steers, if you fill out a cut sheet and don't specifically request tritip , the butcher sends it to ground or maybe stew meat.

I don't have an HEB close to me but I have had trouble finding tri-tip lately as well. Nothing at Kroger, Tom Thumb, Walmart, I haven't tried Costco yet.

I made one on the smoker a month or so ago and my wife has asked for it again but I can't seem to find any and I don't want to disappoint a woman when she is asking for meat.

We have the same HEB-Kingwood.

I see tri-tip there almost every Sunday when I shop - usually prime, but sometime prime and choice.

Order some online by any local rancher. RC Ranch out of Angleton or an Aggie owned ranch, Shieldknight Land and Cattle out of the panhandle are my go to's for Tri tip.

During my time in the meat industry, the majority of tri tips went to the foodservice market. Applebees used them exclusively for many years. Also, if a retailer is grinding tri tips, they're throwing away $$$.

If you're wanting a specific cut, you may have to take a bunch to satisfy a minimum order. But that is what a vacuum sealer is for.

I would take a prime picanha over a tri tip every day of the week and twice on Sunday.

I've asked the guys at my HEB about prime picanha and they say if they get one and put it out it's gone almost immediately.

If you can find untrimmed tri-tip, they're about as good as picanha. The fat is softer so it renders better. The problem is finding them. Once place I used to go to carried them, but they closed their retail storefront.

Ask the butcher to keep one for you. I started talking to my butchers at my local Tom Thumb years ago to get them to grind roasts for me instead of buying ground beef. They stopped doing that as store policy, so now I have to grind it myself.

In my experience most butchers are happy to take requests. They also love to talk about meat.
TexAgs: as long as we have each other, we will never run out of problems.
