I have no business answering this, because I barely know what Chuy's is and I don't live in Waco.
I DO know several people from here (Temple) who have eaten there and here's what they said.
The food is good; I assume it's Ninfa's good, but again, I don't know.
A real good friend of mine went to eat there after the T=High basketball game the other day, and said that the restaurant limits you to one margarita per ID.
meh, you have to understand Waco when you ask if a new restaurant is worth the wait...there is so little to do here that new restaurants are to die for so yes it, the chance to experience something new and be the first to blab about it, is worth the wait. That alone gives some residents the reason to live and gossip.
The question you should ask....Is Chuy's food in general worth waiting for? If it is good or great in other cities join the crowds and enjoy a drink or three while you wait.
I haven't had to wait more than 10 minutes at lunch and didn't have to wait at all at 6:00 on a Tuesday night. The food is good and affordable , cheaper than OTB or any other Mexican food chain restaurant. Almost all the dishes are under $9.99. Go for it!
chuy's is one of my favorite mexican food places in austin (although, there are quite a few really good ones here). i lived in temple for several years, and they don't exactly have great mexican food restaurants. so, i would venture to guess chuy's is pretty darn good compared to what else you can get in temple. worth the wait.
