Tried to get the only Ford dealer in town to come close and he quoted me a deeply "discounted" rate of nearly $2k over the Granger/Flood/Ziegler price and then tried to tell me those prices aren't legit.

It's worth it to price the Ford esp warranty the same as you price the vehicle. Some dealerships regularly price/sell these warranties with a 2,000 markup or more has been my experience on the 2 different 2023 Fords I purchased from different dealerships.
