I'm going to Chengdu for a week next month. Has anyone successfully installed Alipay and/or WeChat pay and had payment methods set up before arriving? I have downloaded the apps but setting up the payment methods is a bit confusing. Any other tips for things I can do before I go to make things smoother would be appreciated.

Don't really have a tip but I mostly stick to Alipay. It's complicated but doable... Just push forward with the process. Alipay has Didi built in which is Chinese Uber. I'd say having a working payment app in China is a non-negotiable need… they are nearly cash free at this point.
Spring 2019 I traveled to the PRC for a two week biz trip. I don't think I saw a single soul use tangible currency. The entire population uses e-payments.

Just saw this. In Chengdu right now. Alipay works great everywhere. I hope Apple Pay gets to this level in the US. linked a Chase credit card, and it is seamless for everything from Didi to public transit to restaurants. Only downside is surf shark isn't beating the great firewall as well as it did last year.
I was there last year. Went to a really nice panda preserve. I used Wechat pay a bit, but I mostly just used my credit card. Tons of cash used used at street vendors, small markets, etc. Best thing was buying a SIM card on Amazon with 15 GB. Didn't have to use any hotel wifi for 3 weeks, and just handled all communication on Messenger and WeChat.

TBH, I was on an adoption heritage trip and pretty much had diplomatic immunity. Hopefully OP has some safeguards, and low risk of detention or suspicion.

I teach in BKK, and I'm going for spring break.
I am working in Malaysia and their Touch and Go app (eWallet) works in China. I would be surprised if Thailand doesn't have something similar.
I also noticed that when I was using my Malaysian SIM card I didn't have any issues with the phone or using a VPN, but when I was using my US SIM, I couldn't use a VPN
