Any recommendations for buying fresh beef? We had bought about 35 pounds of various cuts from a vendor at the farmers market at the RIM but they stopped selling the meat in bulk. So we are looking for a new provider, preferably selling a similar amount.

Both of those are good.

Dziuk's in Castroville is another good option.

Well it started as Kotzur's and was sold to Dziuks. But a lot of you young whipper snappers don't know all of the history of meat in Poth, TX.

Well, if Dzuik's was actually still IN Poth... used to get my meat and jerky there with my grandfather in the 80's... and sausage from Pollock's in Falls City...

You can get Pollocks now at HEB but its a lot cheaper to buy in bulk down in FC. I think they have the best in the area along with Pruski's. Something they have at Dziuks in Castroville that they never had in Poth is their Parisa. That's worth the trip to Castroville alone.

It's extremely delicious. It's cooked with lime juice like ceviche.

It's "cooked" with lime juice. Never fails to cause a case or two of the trots when its served in Devine. I stay away.

I grew up two blocks away across the field from the Herman Sons Hall. Which has since been torn down and is no an Assembly of God Church. Ironical considering the amount of sinning done on that property. I'm sure I knew your aunt and the other guys grandpa.

Drove through there a few months back and saw it intact but a church. Must have been fairly recent. I went to a few family reunions at that Herman sons hall growing up.

I had a couple of Great Uncles and Aunts on my mom's mother's side that lived in Poth... Snogas and Waclawczyks. And her dad had a sister that lived there... a Pawlik turned Brown.

Spent plenty of time in and out of Poth growing up, as well as Pawelekville and Falls City.

I have a house about a block away from where Dziuks used to be. We completely renovated a 90 year old house and spend holidays and some weekends down there. It's pretty dead compared to when I grew up there. My oldest daughter loves it there because she can ride horses all over town and around it. Pretty peaceful place for the most part.

I'm sure I would know you. I worked at the old service station for 3-4 years while in high school and part of college. I know everyone over 45 in Poth and FC and am related to a bunch of them.

Back to the original post. I sell grass-finished beef. I am 20 miles south of Poth down 181. We have been eating this beef for about ten years ourselves, and have just started marketing the beef to others. It is very difficult to finish a beef on grass alone, but we are doing it. Our beef is as fresh and clean as it gets, never leaves the ranch until we butcher it at Wiatrek's. We have a website, hickokranch.com. Would be glad to give any good Ags a free sample if you are down my way. We sold 16 head last year as quarters and through the Victoria farmers market, and an email buyers club. Would love to visit with anyone interested, contact info on the website.

Wiatreks meat market in Poth is great. It is also Aggie owned and operated. My wife and I get all of our meat from them. Always fresh and great quality. They also just started doing online ordering so that you can have it shipped to you. Check it out, you won't be disappointed

I have a cookbook I think is called "Old Alsatian Receipts" or something like that (Alsatian receipts = recipes in English). Anyway there are a couple of pages of parisa recipes including Castroville Parisa, Quihi Parisa, DHanis Parisa, Devine Parisa, and maybe more. They are all fairly similar.

I have been eating parisa at weddings and parties for too many years and never have been sick from it. I am pretty wary though and make sure I am mixing it with plenty beer. The beer cooks it in my belly.
