So I basically only know how to cook gumbo in my instant pot. After buying a cookbook on how to cook with it, watching YouTube videos...etc....gumbo.

What else can you do, simply, using chicken that does not require me going to the grocery store (virus risk) and buying $50 worth of stuff to cook a simple meal.

Any ideas.

Anything you can do in a dutch oven or slow cooker you can do in an Instant Pot.

My favorite is steel cut oats. They're healthy and they will stick with you the majority of the morning.

Saves time for cooking down some vegetables if you like them southern style.
These are a couple of my favorites.

Southern style green beans
I use a little more butter and onion and I cook for 15 minutes instead of 7.

Southern style cabbage
I add more bacon and butter and cook about 12-15 minutes.

When I get a late start, I finished smoked pork butt for pulled pork in it.

Also, we bought an IP cookbook when we bought the pot that was helpful: Great Food Fast by Bob Warden. Nothing fancy, but a good intro to IP cooking with some basic staples.

I didn't know this when I first got mine, but you can cook totally frozen foods as well.

Beans are great and don't need to be soaked overnight. Risotto is awesome.

Like others have mentioned; Carnitas, beans, collards, and soups are all great.

My family loves french dips too. Buy chuck roasts when they go on sale. You can freeze them and then throw it straight in the instant pot with some onions, garlic, and a splash of kitchen bouquet. Pull the chuck out and set the pot to saute while you shred the beef. Load up french bread rolls with some cheese, the onions from the pot, mushrooms, green peppers, jalapenos, whatever you like, and hit them under the broiler. I personally love some cream cheese and sauteed jalepenos on mine.

Serve the jus on the side. I also freeze the jus and use it as a stock in other recipes.

We have made many things in ours, but we most frequently use it for frozen chicken breasts. I always have plenty of cheap frozen chicken in the freezer. Put in the IP with a little water on high pressure for 20 minutes you have cooked chicken. Use for chicken salad or in fettuccine Alfredo or anywhere else you need sliced/shredded chicken.

Recently I added a whole bunch of Frank's Red Hot to my frozen chicken breasts in the IP, and we made sandwiches with it. It was great, and good as leftovers.

I can always throw together something decent for dinner with my IP and frozen chicken breasts!

Also, how do you go about cleaning the pot? I usually wash in the sink with warm water and dawn soap use a scrubber on the bottom and around the sides. I still get a 'burn' message when cooking a new item. I followed a recipe from the Six Sisters' Stuff who do a lot of IP on YouTube....Chicken cream cheese chili was good, but it 'burn' messaged me before it pressurized?

A cup of water works for us. You could also use chicken broth. Add salt and pepper before you cook if you like.

We like to cook a whole chicken in the IP and then make risotto with the broth while crisping the chicken in the oven.
