Looking for good oyster dressing recipe for Thanksgiving. Anyone have one willing to share?

Wish I could help you - we've had it every Thanksgiving of my life, but there is no recipe. I've seen it done many times but never had to attempt on my own.

I'll see if I can get my Mom to write something down for you (us). I'd say I'd observe & write down what I see this year but the Schwacks are awaiting the Covid results today - pretty sure we have it so we will not be doing Thanksgiving with Mom this year. She's 89 & still cookin'!

There is no recipe but she can probably give a list of ingredients..... and how to throw them together.

I've tried making oyster dressing several times and have never been successful. I eat all of the oysters before they can make it into the dressing...

We eat it every thanksgiving and it's far and away my favorite part of the meal. Here is my grandma's recipe. It's not the fanciest, but it's really good.

Here's a link to the Lucy Buffet Recipe you don't have to give your email to see. Close enough to mine it's not worth me typing out. Biggest difference is I cube up French bread and I add about a tsp of old bay and a tsp of creole seasoning. Also, that recipe calls to reserve a 1/2 stick of butter. I freeze a whole stick of butter and grate it over the dressing before baking. That goes for non oyster dressing too.

Sorry for the delay & for the lack of exact measurements, but that's how she cooks!

Oyster Dressing

Cube & dry one loaf of white bread. (day old)
One bag of seasoned Pepperidge Farms stuffing mix
Fine Chop onion & celery (and maybe a little green onion, too, if you have it.)
Melt at least a 1/4# of butter
Chop oysters & saute in the butter a little. Depending on how much you are making, you can add more - but use at least a pint. Save the liquid for broth.
Use large bowl or pan to mix all ingredients.
Add Eggs. Again, it's by feel. If using the full loaf of bread & mix, probably at least 3-4?
A little parsley, a little poultry seasoning, sage, a little pepper.

Note: It should be pretty moist. All depends on how many oysters and oyster liquid. That is all I know.
