I probably steam it most of the time, but have done all three.

I have smoked it several times and it's really good that way.

Split down the length and blacken in a skillet with your favorite spice blend and some butter.

Going against the grain here, but I prefer it cold.

The best way is over a charcoal grill, but very cool. Like 300-350. Cook without piercing until you can see the grease bubbling inside. Pull from grill and then rest 8-10 minutes, then pierce with a fork to let grease drain out and serve.

The best boudin to buy is made with liver, not meat.

Steam until it just begins to pop and finish on the grill

Serve them with some red beans and rice and you are living your best life.

I like to put it in the farthest corner of the grill, as far from the fire as possible, and let it slowly heat up and smoke.
