Other than Turkey and ham sandwiches
, I am doing traditional thanksgiving gumbo using stock from the bones leftover ham and Turkey but also doing the ad hoc pot pie, except the bottom crust will be made from cornbread stuffing.I love a good horseshoe as well but probably not going to have enough left

I asked this as a checkin question for my team at work. Two different employees replied that they make flautas with leftovers from Thanksgiving.

After having my mind blown and verifying that we have corn tortillas, we are likely to do flautas for both spice and textural change from the main Thanksgiving dinner

Turkey in mole is very traditional and very good. It also helps give leftover white meat some moisture.

Serious Eats sent out an email with some suggestions for what to do with the leftovers. Turkey enchiladas with mole poblano was one of them.

The day after a Thanksgiving = turkey hash. Plenty of bacon and bacon grease to add moisture.

Turkey salad with sweet onion, minced dried cranberries, egg, sweet pickle relish, tarragon leave combined with a dressing of Dukes mayo, creme fraiche and Uncle Chris's steak seasoning. Also saved the turkey carcass for turkey soup stock

My favorite as a kid was turkey divan. Basically a turkey, broccoli cheese casserole.

Turkey stock horror story. A couple years ago we made a big pot. Looked great, smelled great.... covered with foil, put into fridge to cool. When taking it out to bag up and freeze, somehow grabbed the top rim wrong & the foil came off in our hands and the pot hit the floor.

I thought we were going to have to replace the wood flooring. We moved out appliances & the island to clean, clean, clean the whole kitchen floor because it went everywhere and under everything. Got it cleaned up, no damage to the floor or lingering stink.

Haven't made it since.

I'm making a pizza on my egg tomorrow. Turkey, Gorgonzola, cranberry sauce, caramelized onion, pears and pecans. I got frozen pizza just in case it sucks.

I made a half buffalo/half BBQ turkey pizza yesterday.

Ended up making turkey and dumplings using gravy as the thickener for the stock I made from the turkey carcass earlier in the day. Cilantro and corn for a textural contrast and color. Was simple enough using the already made gravy to carry the dish flavor-wise.

So don't put the pot in the fridge. Assuming you're making a stock with the whole carcass and it's at least an 8 qt pot you probably shouldn't put it in the fridge anyway. That's a lot of heat you're putting in there. I let it cool on the stove. When it's cool enough to strain I put it in jars and typically let cool a while longer. Put in fridge overnight and take the fat disc off.

I made those tonight, and they were excellent. The only modification made was to stir some of the mole into the shredded turkey to give it some moisture.

Tomorrow night is turkey tortilla soup to use up some of the stock.

I wasn't too clear on that - it cooled on the stove, covered & put in the fridge to divvy up next day.
