What is your go to for streak from one of the big guys.

I have been partial to Nolan Ryan Ribeyes from Kroger. Occasionally I'll go big money on central market cuts but I'm excluding them from this question.

We like the steaks we get from Costco. They always seem better than the ones we get from Kroger. If we are looking for something really nice we get one from Central Market.

Forgot to add Costco. Best steak I ever made was an A5 Wagyu from there

Costco runs theirs through a blade tenderizer, which makes a huge difference. That's why I love Costco steaks

It also means you're putting a lot of faith in that blade tenderizer being completely sterilized.

HEB prime has been pretty solid. Some of the newer high-end stores are carrying dry-aged beef.

The butterflied Wagyu sirloin at HEB is my new favorite. I actually prefer it over the Ribcap steaks (previous fav) from Costco.

They have great prime at Central Market as well.

HEB is really hard to beat. They have a few stores that have dry-aging chambers, so you can get dry-aged prime at those.

Since COVID started, I have cooked a steak every weekend (other than maybe 2 or 3 when we were out of town).

I have bought prime Nolan Ryan steaks from Kroger, and I have bought prime/wagyu Central Market steaks.

The Wagyu from Central was the best. The primes from both were comparable. The prices heavily in favor of Nolan Ryan beef.

All Ribeyes

Nolan Ryan prime from Kroger: 13.99/lb. Steaks have been 8.5 or 9 out of 10
Prime from central: 24.99/lb Steaks have been 9 or 9.5 out of 10
Wagyu from central: 30.99/lb 10 out of 10

Depends on what you consider DFW area. Several suburbs in DFW have HEB's with more to follow.

Burleson and Cleburne I know do. We are probably moving from FW to Cleburne in the next few months. Wife is looking forward to having one.

I like to buy whole prime roasts from Costco (they dont blade tenderize the whole cuts). I'll usually buy the smallest rib roast and a strip roast in the case. For the strip roast I'll cut as many 1.5 inch thick steaks as I can get out of it. For the rib roast I usually cut it in half first. I'll separate the cap from the eye on one half and tie up a few rib cap steaks and then have center cut ribeye steaks (wife and daughter dont like all the fat in a whole ribeye) from the rest. The other half I cut into big 2 inch whole ribeye steaks for when I want a big steak for dinner.

That usually yields 16-18 prime steaks not counting the rib cap steaks for about $180.

I've currently got a strip roast in an Umai dry aging bag in the fridge as an experiment to hopefully replace mail order dry aged steaks.

Thanks for the tip. I'm cooking steaks this Saturday and if I can get my hands on this at our local HEB I will give it a try. When you say butterflied - do you butterfly it yourself?

Personally I love the Prime Ribeye caps and cowboy cut Ribeye from Costco. Wife prefers tenderloin filets.

I buy a whole prime ribeye or new york strip piece from Costco and cut it at home and vaccum seal and free. Pull out and thaw overnight in fridge whenever I want a steak. Usually get 11-14 steaks depending on the size of the original piece.

It's already done. The pieces are somewhat irregular in terms of thickness but my wife and I like our steak temp different so it works perfect for us. Also, you can cut basically the steaks to size.

I did a stir fry with some "extra" pieces (excellent) but we love this cut on the grill.

I went thru a Sam's the other day in Dallas and was shocked at their prime ribeye. Looked excellent. Think it was $16 a lb.

Another vote for Sprout's. Thick cuts on their ribeyes. Try them. Around $16 a lb

If you're in Fort Worth, you are about 20 minutes (or less) from 3 different HEBs. We are in southwest FW and can get the to HEB in Granbury in about 20 minutes, the HEB in Hudson Oaks in less than 15 minutes, and the HEB in Burleson in about 15 minutes.

Wrong. They do sell grass fed, but also sell grain fed too.

Call me crazy but we live in Ryan Place (medical district) and drive to Burleson HEB almost every weekend. Worth it!

Absolutely! Like I said, there are 3 different HEB stores within 15-20 minutes of us in SW FW. We shop at all 3 depending on where we happen to be that day.
