I've been wanting to try them forever. I finally pickled a couple dozen and the kids and me loved them. I just used a basic recipe off of the web and then added fresh jalapeos to one of the jars. Anyone have anything special they do?
I have made a couple of batches with "fancy" recipes with spices and such that were good. The past few I have made was a modified "Alligator Egg" recipe I found online for Cajun eggs. We haven't looked back since we made them.
Basically vinegar, crab boil, and Louisiana hot sauce.
I think I just searched Cajun pickled eggs and the alligator egg recipe was the one I used. I added a little more of everything. They have a good vinegar twang, and not overly spicy even adding more hot sauce and boil.
Edit: I think this is the one I found, but also added Louisiana hot sauce in place of the pepper flakes. I combined a couple, but remember going heavy on the boil until it looked right.
