Could anyone offer some suggestion on recipes for certain cuisines?

Benny and I are doing a thing where we pick a cuisine, suggested by my FB friends or his IG followers, and spend a week making at least one breakfast, a couple of lunches that can be packed, and some dinners from it.

We did well on the South Korean and Lebanese ones because I already made a lot of that stuff.

Now we have been suggested South Indian, Puerto Rican, Nepali, Moroccan, Memphis BBQ, Irish, Spanish, and Low Country.


But I want to try something new with each one. So no paella or colcannon.

B-man is okay with medium spice now, so Indian doesn't have to completely mild

I know I keep asking a lot of questions on how or what to cook.
My weird food choices should only be for me and not forced on my family.
I am really trying.

Anything suggestions of a site you have used would be awesome

Irish I'd make a soda bread and pair with an Irish cheese. I'd also try a lamb stew.

Memphis BBQ (like all BBQ) is pretty pointless if you don't have a smoker.

Indian I'd do a butter chicken and/or tikka masala. Probably a curry, although honestly not my favorite. If you want to get adventurous try something with goat.

Southern Indian is generally more vegetarian and fish based. I've made this numerous times and it is excellent. You can tone down the heat if needed.

Spanish tortilla is always a good choice if you haven't made that. You can cheat and use potato chips instead of frying the potatoes.

You can easily do memphis style pulled pork in a crock pot/instant pot. Get a smaller pork butt, rub with yellow mustard, coat with Adam's Memphis BBQ rub (available everywhere) and slow cook it with a can of coke in the crock pot.

Serve on a bun with some slightly spicy BBQ sauce and Cole slaw ON THE SAMMICH. Obviously agree that smoking is the better option but the experience of the Memphis style pulled pork is still there if you do it this way.
