Post em here! I'll start. Here's what I had in my fridge tonight: Leftover tri tip (cooked sous vide at 131), leftover sauted mushroom, leftover fig and onion reduction. Decided I'd make a pasta with all that. Whipped up an Alfredo sauce (butter, garlic, cream and parm). Added the mushroom and onion. Cubed the tri tip to about 1cm pieces. Boiled some vermicelli and threw it all together. Didn't even heat the tri tip... just let the hot pasta warm it up. C'est magnifique!

Pulled 4th of July leftover bratwurst out of frig. Nuked for 30 seconds. Put on bun. Squirt on brown mustard. Paired with a side of Lays potato chips.

Pretty much every leftover can bucket into either a quesadilla, a scramble (as already mentioned above) or a soup/chili and be pretty good in my book.

I recently had a gyro burrito. It was good

So the next time I have left over chicken shwarma, I am making tacos with it

Smoked chicken quarters (salt, pepper, simple herbs, but no bbq seasonings):

Quesadillas, enchiladas, tortilla soup
Chicken salad (grapes no raisins)
On a garden salad
In toasted sandwich sliced thick with BALT (bacon, avocado, lettuce, tomato)

Fried rice is a good one too. We also mix up and do pizzas with a lot of our leftovers.

Was just about to post this as my suggestion, or more specifically Bibimbap. Just had that on the mind as I watched Alton's episode on it this week.

I've got 4 leftover baked chicken thighs no one in my house wants to eat. It's really only good the 1st time around, when the skin is still crisp. Suggestions?

Fried rice, shred it for tacos, shred it and add some bbq sauce for pulled chicken sandwiches, make a curry out of it.

I'd just throw them on a plate with a little bbq sauce and eat them. But I rarely if ever heat up leftovers

Enchiladas or Pot Pie or King ranch chicken

Pull skin off and put under broiler for a bit. Use as crunchy topping for something if you don't want to eat with the chicken. I used done yesterday to top a salad wrap.
