I love the simplicity of a good BLT. It's not a sandwich I ever order out just because it is so easy to make a good one at home.
Quality bacon, fresh tomato and lettuce, Blue Plate or Duke's on toasted white bread or sourdough. A good spin is to use cream cheese instead of mayo.
Other greats in no particular order -
Cuban - if you can get good cuban bread this one is pretty incredible too. As long as they know how to cook pork and it doesn't taste gamey/porky. To me it is like a reuben - the whole is greater than the sum of its parts. Found a cuban bread recipe last weekend and told the wife I want to try making it/cuban sandwiches.
Roast beef poboy - simple to recreate at home w/pot roast and gravy. Can't get good french bread like Lidenheimer's in NOLA so its never as good as what you get on vacation. Still - tomatos, extra pickles, extra blue plate, a roll of paper towels, knife and fork - boom.
Fried bologna - good old fried bologna, lot's of it cooked to where it starts to blacken in spots, on white bread - no condiments, don't toast the bread. Super simple perfect sandwich.
I love a good "italian" sandwich if the meat/cheese is cooked. Penn Station makes an excellent one. I omit the vinegar/oil and add extra mayo and extra peperoncini to make up for the fat/twang of the omitted vinegar and oil.
