2lbs beef in 1" cubes (use a picanha if you want to be fancy)
Kosher salt
Coarse black pepper
1 3oz can Chipotle peppers in adobo chopped up
1/4 cup flour
2 tspn comino
2tblspn oil

Season beef with salt and pepper and sear on high with oil in a Dutch oven. Work in small batches and set aside momentarily to get good color/maillard, deglaze pan with small amount of water/beer.

Add beef back to pan, add peppers and shuffle around for 2-3 mins to break down peppers a bit.

Add 16oz water and drop heat to simmer

Simmer for 45 min

Add comino, simmer 15 more minutes

Combine flour and enough water to make a slurry, add to pot, kill heat, let stand for 30 min and enjoy

As others have said, it gets better as it has time to develop

3 pounds chuck cut into 1/2 inch cubes
1 pound tomatoes halved
1 pound tomatillos halved
3 jalapeno peppers
1 Anaheim pepper
2 arbol peppers
1 onion halved
3 cloves garlic
2 tbsp guajillo chili powder
1 tsp cumin
1 tsp oregano
1 tsp pepper
2 tbsp flour
3-4 tbsp flour

Blacken the tomatoes, tomatillos, peppers, onion and garlic under the broiler. Transfer to a food processor with chili powder, cumin, oregano, pepper and about 1/2 cup water and process until smooth.

Season meat with salt and brown over medium high heat in a dutch oven. Remove meat, add 2 tbsp oil and flour, and cook until chocolate in color. Add the contents of the blender, bring to a boil and add meat. Cover with lid and transfer to oven set at 375 for 2 hours.

Not a true restaurant style carne guisada but my family absolutely loves it. We use venison ham steaks or backstrap steaks that have been tenderized @ the processor. With the meat already tenderized it doesn't have to be cooked for hours to get tender. Cut the meat into cubes and lightly brown in skillet with cooking oil. Then add Bolners Fiesta Carne Guisada seasoning per package directions. Sauce will thicken quickly when stirred. Simmer for about 10 minutes and it's done.
