This was my first attempt- did a smoked version and hung it in the vertical box on my stick burner. Cooked it at 225 for about 4 hours with apple wood. Came out really good. Didn't get a picture of the final product, but it looked better and better as it went along.

Pork butt sliced in ~1/4" strips. Boneless would have been easier, but HEB had ours for $1.30 lb so I made it work.

Think I can do the same thing on my rotisserie on my grill? Maybe put a pan below it to catch the juices sort of as an au jus.

I'm actually doing this exact recipe tonight with a roasted poblano pepper cream corn/elote.

Time to do this again since H-E-B has pork butts (at least in the Houston area) for $0.97 lb.

Also planning on making a batch of barbacoa, which will be my first attempt. Got the cheek meat and going to mix it with some chuck roast. Plan on an hour plus of smoke, sear and going to finish in the instant pot on high pressure for an hour.
