Smoked Meatloaf

4lbs ground beef (80/20)
2 lbs of breakfast sausage (i.e. jimmy dean)
1 cup of bread crumbs
1 cup of shredded parmesan cheese
6 cloves minced garlic
1 packet onion soup mix
2 medium sweet onions, chopped
1 large red pepper, chopped small
4 tbsp bbq rub
1 tsp course black pepper
1/2 tsp cayenne pepper


Massage all ingredients together and create a circular "mound" of meat 3-4 inches thick in the center. Smoke at 250 degrees until internal temp of 130.

Once you get to 130, increase heat to 350 and cook to 160. This creates a nice texture on the outside.

A few minutes before you pull it off, mix 1 part of grape jelley and 1 part of bbq sauce and pour over the top of the meatloaf. You can heat them together in the microwave to liquify the jelly.


This is my favorite meal on my pellet smoker. Enjoy!

Meatloaf is one of my favorite meals. We just had a couple of steers butchered and have 6 freezers among the family full of homegrown beef. My wife made a meatloaf for Sunday dinner and we had meatloaf sandwiches for dinner last night. Fortunately there is just enough leftover for one more sandwich for my lunch this week!

Making a riff on this tonight.

Mostly followed the recipe, only major change is I used a healthy dose of red pepper flakes instead of cayenne, and then made a puree of sun dried tomatoes with hoisin sauce to use for the top dressing. Didn't start until late, will post pics once it comes off the smoker.

This sounds up my alley.

A few months ago I made smoked sloppy joes. I made up the sauce which is why the spices listed were estimates of how much I used. I might need to rock this again this weekend as it is one of if not the best sandwich I've ever made. Put some fresh grated cheddar on top of the meat, served on a toasted bun. Damn good.

1lb ground beef
1/2 cup tomato sauce
1/2 cup no sugar added ketchup
1/2 cup water
Approximations -
2t Worcestershire
1t dijon
1T regular mustard
1t onion powder
1t garlic powder
1/2t pepper
1/2t kosher
Apply Chupacabra to each side of the beef (flattened to fit in 1 freezer bag


Kamado to 320ish
Meet on grate over pot of sauce
40 minutes on grilll
Tossed large handful of pecan chips on coals right before I put the pot/meat on

Finish on stove mashing up the ground beef until fully incorporated
Staff - take out the trash.

You forgot to stuff it. I like putting hardboiled eggs in mine or broccoli and cheese. Treat it like a fatty.
