What do I do with Hamburger meat?

I love beef. Roasts, steaks, BBQ.

I'm good with all of that.

But, I just bought a cow, and I have almost 90 lbs of hamburger, and I just don't cook that.

I mean, I make a mean hamburger. Sautee the onions, work it into the raw meat. Profit. I also make a mean chili. So easy.

But, other than burgers and chili, where do I go? Salisbury steaks? I'm lost here. Need help.

Mix up some hamburger meat with rice-a-roni and an egg and spices. Make into small balls and brown the outside. Then cook on slow with some packaged brown gravy (and extra water) mixed in and cook until the rice-a-roni inside is cooked. Bam: rice-a-roni meatballs.

It's a great dinner if you need something fast and not too carb heavy. I have never done mushrooms in it but it would be good I think.

I make beef stroganoff with ground beef. Very easy and quick to make and if you make enough and its great as leftovers.

My mom used to make "mock fillets" where she'd make small, fillet sized hamburger "patties", wrap them in bacon, then broil (she didn't BBQ, and we didn't own a gas grill).

If you enjoy smoking meats, goggle " jacked up smoked meatloaf " recipe. Changed my meatloaf perspective substantially. It's legit. Make it probably twice a month. My kids will about take your arm off for it. And it makes great sandwiches the next day if you have to brown bag it and there is any left over.

I use a pound of ground beef and a pound of ground venison.

For quick dinners there is always sloppy joes and (little more to me but not much), NY "chopped cheese". Kind of like a mix between burger and "Philly cheese steak" chopped cheese has worked well for me.

My mom made a concoction she called goulash (although I'm guessing it was an East Texas version of goulash rather than resembling anything Hungarian).

Start by boiling a cup of macaroni noodles.

In a large skillet saute an onion. In the same pan brown 2lbs of ground beef seasoning to taste. We'd always add salt, pepper, garlic powder, cayenne, paprica, and red flake. When my dad made it he loved sweet and spicy things so he'd even throw in a tbsp or two of brown sugar and extra cayenne or chili powder.

When that's almost done stir in a small can of stewed or diced tomatoes and a couple of scoops of tomato paste.

Stir it up and let all of that simmer for 10 minutes to tighten up and then stir in some of the noodles for filler. I always viewed it about 5 parts meet mixture and 1 part noodle.

You can improv it multiple ways and not screw it up. Sometimes I add other vegetables (bell, leftover broiled potatoes, carrot, celery), you can spice and flavor it however you want, etc.

My kids still love this dish every time I make it for them, and it only takes about 15-20 minutes (if the meat is already defrosted) so it's a quick easy comfort food meal on busy nights.

Generally known as American Goulash. It's actually got yankee roots and became popular in diners in the Northeast. Try adding a dash of cinnamon next time you make it

You have other cuts of beef, but you can bread a thin patty of hamburger and make country fried steak with it.

Making parisa from previously ground meat is just asking for trouble. Don't do it.

Cooking Koftkas now. They smell great. Roasted Greek veggies to go with it. Easy, different. Tziki sauce to go with. Probably trying moussaka this weekend.

Anyone else ever just cook up a batch of random **** using ground meat as the base? Maybe saute some veggies that need cooking, or perhaps a can or 2 of random stuff you have in the pantry and add it to the browned meat. Season it up however you're feeling like. Bold and spicy? Asian? Make a random stir fry over rice?

I do something like this fairly often with ground meat.

Yes. I make random crap with ground venison all the time. I harvest a lot of deer every year and when season is approaching I start cooking a LOT of meat to empty out the freezer. Lots of random meals pieced together. Weird meatloaf's, meatball, pastas, casseroles, etc. Fun to make stuff up in the kitchen.

Burr Oak's post made me think of Egg Roll in a Bowl. It's a pretty simple stir fry kids love and I'll usually sprinkle on some fried won ton wrappers as well.

Made a spur of the moment meal today.
Pound of ground beef
1 jar mild Joe t's salsa
1 poblano paper
1 red bell pepper
2 serano peppers
1 small red onion
Some white mushrooms

Dice and Sautee all veggies brown meat add salsa and heat through for flavors to combine

Served with sour cream. Turned out really good.

Back in grad school, called it "tire patch".

Make spaghetti sauce, but lots of burger, drain a small can of corn and toss in. Lastly toss in a handful of minute rice.

Eat out of skillet over the sink.

If you need to free up space or use before it freezer burns, there is no faster way IMO than doing some ground beef jerky if you have a food dehydrator. Super tasty, easy, and you go through meat real damn quick. Used the below recipe and have been happy with it. Jerky sticks are such a great snack.
