I just made a big batch of beef jerky using home made teriyaki sauce. Yummy!

Any beef jerky makers out there, and how do you flavor it?

2% salt by weight, and sprinkle on some black pepper. Put it on a rack, and let a fan blow over it. Depending on how thick it is cut, it's done in 36-48 hours.

Season liberally with Bolner's Fajita Seasoning (make sure it is the one that has salt), take outside and put in the bbq pit and use an a-maze-n tube filled with pellets to generate smoke in the chamber of the pit (I try different woods like hickory, oak, mesquite, etc), let it smoke for 10-15 min, throw in the Excalibur dehydrator to dry out. Makes a very good jerky, very simple process.
