I have done the 3-2-1 method and the 2-2-1 method. Both seem to make the ribs too tender while cooking, I have a Big Green Egg and the temp I cook at is 250.

Any recommendations?

I don't wrap on my BGE anymore. If I want dry rub I just leave them until done. Wet I baste the last 30
Minutes. I cook 270 or so until done. That's normally 4.5-5 hours roughly but it's cooked to tenderness not time n

I do 3-1-0.5 on my KJ. Like you, the 3-2-1 method made them too tender.
