I usually roast a ton for use throughout the year. Curious to see what recipes people have that use the chili.

I've made soups, queso, cornbread and am planning on infusing a turkey for thanksgiving, but would love to hear if anyone has any favorites.

Green chili gravy, pour it on pretty much anything

Green chili breakfast anything. I had egg, cheese, spinach, green chile on English muffin for breakfast this morning
Green chile mashed potatoes
Green chile grilled cheese
Green chile chicken lasagna
Make a creamy green chile sauce and put it on everything imaginable
Green chile chicken enchiladas
Green chile cornbread
Green chile Mac and cheese with bacon
Green chile chicken quesadilla
Grilled chicken sammich with green chile and mushrooms
Green Chile queso
Green chile stew

Green Chili Stew get's my vote.

I would love to find the recipe for the stew from Rudy's BBQ. Anyone? Anyone????

Green chili enchilasagna

Green chili baked potato soup. I make mine with a jalapeno and a poblano, could easily sub in hatch chilis.

That's my favorite as well. I use the below recipe in the dutch oven and then make stacked enchiladas. Feels like I'm back in New Mexico.

I like to mix them in with grits or polenta

Grill some chicken breasts
Just before done put roasted chiles over them
Cover with provolone cheese

On a toasted bun, spicy mayo
Add chicken breast

Serve with side of choice I prefer tots

Grind them up and use them in an arrabbiata sauce
