Pretty obvious, not really needing a recipe. This duplicates the best of what we found in Main and where you can find what you need in Texas.

Trader Joe's Brioche New England style hotdog buns.
Buttah
Lobstah - equivalent of two 6 ounce tails per roll. $5.99 for North Atlantic 5 oz tails at HEB.

Steam lobstah ten minutes, shell, chop into 3/4" chunks, toss in buttah lightly season if you have to.
Grill buns inside and out with lots of buttah. More buttah.
Stuff lobstah in rolls.

Serve with Toppling Giants King Sue New England style double IPA. Our HEB and Spec's had it until I purchased all they had.

Cost: about $15 per roll and $5 per DIPA.

Those buns available in Texas? There is a great lobster roll place in Austin that gets their buns from a local bakery but the bakery doesn't sell them to public.

Yes. We get them at Trader Joe's in Rollingwood. I've seen advertisements for those Austin lobstah rolls, they don't appear to have much lobstah. I bet they go for more than $15. Even in Maine the big rolls are $30.

Yeah, better things to get at Clark's anyways. I can't seem to get out of Garbo's for less than 150 regardless of intent. Love the place but always surprised at what I end up spending

We make these all the time and there is no way you can cram 2 tails in one roll. 1 tail per roll is extravagant.

Daughter with a lobstah roll. You must get lobstah rolls in Boston if they don't have at least this much lobstah.

We use two and a third five ounce tails minimum. Anything less is pathetic.
