Crawfish Boil

I did a pre-boil last weekend to set up for the main event Saturday. I've got things down to where I'm pretty happy with things so I thought I'd share.

Pre-boil
I like Slap ya Mamma for the flavor and Loiusana brand for the spice so I use about a 2:1 ratio in the pot. For about 15gal I use a 2lb SYM and 1lb LA. Add in about 6-8 sliced and squeezed lemons and bring to a rolling boil. Add in a rack or racks of baby back ribs and simmer for 30-35mins until meat starts pulling back from the bone. Remove and grill for appetizers. I glazed these with honey-butter-franks-blackened seasoning.

Bring the pot back up to a boil and add peeled onions, garlic heads, potatoes, and mushrooms. Toss a lb of butter in the pot as well. Boil for about 5-7 minutes and add the Crawfish, Sausage, and Brussels. Bring pot back to a boil for about 1min and kill the fire. Add frozen corn and cover. After 10 mins, add shrimp, crab, and asparagus and re-cover. Let soak for 20 more minutes. Drain and dump everything in a cooler and toss in another stick of butter and sprinkle with Slap ya Momma boil seasoning. Close cooler for about a minute for the butter to melt then pick it up and shake it up.

Everything came out perfect. Bugs easy to peel and well seasoned, shrimp perfectly tender, veggies not mushy, and sausage spicy without the fat boiled out.

Wife and I are attending a crawfish boil Saturday night... bet it won't be as good as your's looks and I'm sure tastes.

Asparagus and Brussels? Hmm.

I love both of those things but I've never hard of putting them in a crawfish boil.

You forgot the pineapple! Looks good-where did you get the crawfish from? We did our second boil of the season last weekend and it was pretty damn good. We have gone more towards lightly seasoned water to boil and then tons of seasoning and add ins for the slough (sp?). Also big difference in getting them from Lazy J versus dirty and more dead heb ones. This is what was left that went into crawfish cornbread after we peeled it.

Lazy J for sure. I won't get HEB crawfish after last year. Got a bag that 15-20% were too small to peel and then lots of dead. I didn't have a single floater in the sack on Sunday and they were clean.

I get text alerts from Cayenne Kevin, but I work in the med center so it's not a big deal to pick them op if he's significantly cheaper than Lazy J which is not often

Yea husband had to do a crawfish boil for Turkey hunters down south so had to use heb and that's when he noticed the huge difference.

I have seen a lot of wild things go in the boil pot, but ribs is a new one for me. Will have to try it!

It's early, and I missed in the text about the crab, so when I looked at pic, all I could think was WTF IS A HAND DOING IN THERE?!!!??

Toss some hard boiled eggs in as well (whole) during the soak. Great munchies along with the garlic, shrooms, etc.
Staff - take out the trash.
