Copycat Pepperoni Rolls

Double Dave's Rolls

We used this recipe last night to make some pepperoni rolls. They tasted great.However, we didn't get the "roll" part right. The direction in the recipe linked just didn't make sense to us.

Anyone have a link or video of an easy way to turn the pizza dough into a pepperoni roll?

I use this method. I buy the pre-made dough from my local grocery store and just stretch it out to roughly the size in the video. Some of them will have a blow out but I like the greasy, crunchy, pepperoni flavored cheese.

I'd also roll the dough pretty thin. I've tried this using pre-made pizza dough from the grocery deli section and I definitely didn't roll the dough out enough.

Maybe someone who is good at baking could chime in but as far as I know, that chewy texture is helped by gluten so beating the dough up or rolling it thin helps gluten out in the stretchy-protein structure and so forth?

As a former DD employee… we'd let them sit in the fridge for a few hours and squeeze out the bubbles before they went in the oven. Don't know if it'll matter… but I'm sure we did it for a reason.

Can you share the recipe for the chocolate cookie dessert pizza? At least that yellow stuff between the dough and the chocolate chips. My daughter loves it and we're not near a DD.

Pizza dough
Pepperoni
Gouda cheese.

I also add garlic butter.

Pretty easy to make.

I actually never made those. Weren't really big sellers outside the Buffett and I mostly worked nights.

We use the Delallo pizza dough from the H-E-B pasta isle since they quite selling the frozen dough ball brand. After letting it rise for an hour I typically split it into two and place in the fridge for an hour or so. Then I bring out to room temp for a half hour and make the rolls (provolone and 5 slices of pepperoni max). The texture comes out pretty close to DDs but if you make the dough, then the rolls right after they tend to be very soft minus the outside crust DDs has.

The trick is the ranch dressing.

Had to be thick enough to hold a pepperoni roll upright.

You can buy a packet of ranch dip and follow the instructions. Or ranch dressing and follow the instructions.

H-E-B sells a homemade ranch in a bottle in the produce section. It's really good.

Make your own ranch. You have everything you need in your pantry minus buttermilk.

It's best if it sets up overnight.

If you want to go big. Make your own mayonnaise. It's easy and better than store bought.

Former DD employee here too. We would make them during the day and put them in the fridge. Only reason we did this that I know of was because the day was much slower for us and that gave the night crew already made rolls and they didn't have to worry about making them.

Man, that was a great college job...all you could eat while working saved me a ton of money in college. And if we had a cool manager at night, once we shut down and were just cleaning up, beer taps flowed!

This was back in the late '80's early '90's at the Bryan store.

I worked at the one in Huntsville for a year. Everyone I worked with was a major stoner so I kind of just worked alone most of the time. My store didn't inventory **** so I'd throw a pizza through the oven on my way out of work everyday.

I only use garlic herb aioli because Ranch is disgusting. So is store-bought pepperoni. Only imported capicola for me, with house aged goat cheese.

This recipe tastes like Pillsbury crescent rolls instead of pizza. Need to find a frozen dough somewhere or try mixing up a batch from scratch.

That's why you make your own pizza dough. Flour, yeast, etc or just a pizza dough mix from the supermarket taste far better.
