Any recommendations for a mild goat cheese that can be bought at most grocery stores (Heb/Kroger/Market Street)? I've had some that I couldn't stand because it had a very strong ?mineral? flavor, then others are mild like a cream cheese/feta hybrid.
This weekend for a bbq I'm going to try to recreate the jerk wings from Kaya Island Eats in Key West. It's a relatively new restaurant that quickly became one of the top rated on the island. It is killer and immediately one of our top 2 "will eat every trip" restaurants.
I'll brine the wings, smoke'em, then top with a creamy jerk sauce (jerk marinade and mayo), green onions, and either goat cheese or feta.
