Marrow on steaks instead of butter

I recently heard someone talk about grilling split bones and scooping out the marrow to put on the steak in place of butter.

They buy the bones split vertically to make scooping out the marrow easy.

Anyone here tried that?

Havent tried to do it myself at home, but have had it at a couple restaurants. Its delicious. Way different than butter for sure. Ive also had a marrow compound butter so you get the best of both worlds. definitely worth trying and doesnt seem super difficult to do at home.

Marrow on toast is great, but I could see using it instead of butter to reinforce the beef flavor, especially if you are cooking filet. You can get marrow bones pretty easily these days at most grocery stores and butcher shops if you wanted to try it out. Given how awesome potatoes taste when cooked in tallow you could try putting roasted marrow on a baked potato instead of butter, I bet it tastes awesome.

Marrow mixed with butter and poured over popcorn is heavenly. I would just warn you to be careful with it because it is super-rich, and can give you a case of the chorro very easily.

I've had it. wasn't really my cup of tea. much prefer butter.

We roast the bones and then scoop out the marrow and eat it or put it over a steak. Then the bones go into the Instant Pot for bone broth.
