BCS Local kolache chain: what cheese do they use?

This is going to seem random for a first post. I spent something like 10 years in BCS, starting with Texas A&M and I thought I might find people here who would have an idea about this question in my mind. What kind of cheese do you think Kolache Rolf's uses in their savory kolaches? Every time I get a kolache somewhere else I have to get it without cheese because it seems like every other restaurant uses an awful orange, processed cheese. Rolf's uses some kind of white cheese, not a lot of it, and I'd be pretty surprised if it was processed.

The only other good kolache with cheese I've had was at Kai's Donuts near the border between B and CS and I think they advertise that it's monterrey jack.

Yeah, I don't have any power over what Rolf's calls the ones with bacon, ham, or sausage. Any ideas about the cheese they use on their pastries that aren't sweet?
