I made a pot of shrimp, redfish, mussel gumbo yesterday. I made my roux with peanut oil and flour and stirred it a long time and got it to a nice old copper penny color. MZ R was in Houston for the weekend visiting the GD so as I consumed one too many adult beverages, I forgot the rice. Was it still gumbo? Also made some cornbread using buttermilk and with jalapenos and bacon in the mix. I added in some crunched up chicharrones .......was it still cornbread ? Inquiring minds want to know.......then I watched the game.....
