Philosophical question: Is pizza without sauce a pizza?

On the Chef's Table: Pizza mini-series, Sarah Minnick says she doesn't use sauce on her pizzas because sauce makes it difficult to bake. So her pizzas are the dough, cheese, and the toppings. She's gained quite a following because of the eclectic choices in toppings she uses. Basically, she's become proficient at making sourdough bread, and topping it with cheese and something else. She made sourdough every day for 5 years straight to hone he craft, so I respect her dedication. I'm just not sure it is pizza.

Is a round flatbread with cheese on top a pizza if it contains no sauce? Even white pizzas have a sauce.

I'm gonna say no. At that point it's just bread with melted cheese and random accoutrements.

If she was a better chef maybe she wouldn't be going the no sauce route and calling it pizza.

Tomatoes do not agree with my stomach, so marinara sauce is out for me. When I order or make pizza it has alfredo sauce, olive oil or no sauce at all (depending on the toppings). It's still pizza without sauce. Do you not consider a hamburger without sauce still a burger?

The cheese used is dependable on the region. I think mozzarella and gorgonzola are standard and the other two can be changed.

I see what you're saying but sauce isn't an integral part of a burger.

I say pizza = bread/sauce. It doesn't even have to have cheese to be pizza (tomato pie or facchia de vecchia) but bare minimum it's bread and sauce.

Sauce is sauce. It doesn't add anything for me on pizza (except give me acid reflux). I'm much more concerned about the crust and other ingredients. Furthermore, I've never heard anyone talk about how good the sauce is at any pizza restaurant. I routinely hear about the crust and the toppings.

It's certainly all preference but I'm a sauce guy. Bread and sauce are my focal points.

I'd 100% disagree, unless olive oil is a sauce in your definition

when Dolce Vita was kicking it had a pizza rated as one of the best in the country and the ingredients were taleggio, arugula, pears & truffle oil

but I'm sure you bread and sauce guys know best

I'd consider olive oil a sauce. That's essentially what focaccia is. Little salt, some herb, good dough and oil? Yeah. I'll call that pizza. Now, it had better be some good ass oil. Don't bring no Kroger brand stuff to that party. Better be good oil.

No one said it had to be tomato sauce. I think garlic sauces and white pies are totally acceptable.

You haven't? Almost every pizza review I've ever read says something about the sweetness, smokiness, boldness, tang, spiciness, etc. of the sauce.

Good sauce and how it's used is what truly sets a pizza apart, IMO. These high end places all have a good dough and all have good cheese/toppings.

yep.

sauce can absolutely make or break a pizza. You can have the best crust and toppings in the world, but if your sauce is terrible, i'm not eating it.
