Chili gravy is fine, sometimes I'll splash some Valentina or Tabasco if I don't have Valentina. Green sauce on chicken for sure.

I might do a taqueria jalapeno salsa at the most. All really good tamales need is a little salsa with some mild heat and acidity to liven them up.

Can be cut down proportionally. It tastes like every chili gravy in every mom and pop place ever.

2 Cup cold water
4 oz unsalted butter
1/4 cup flour
2 TBS chili powder
1/2 tsp paprika
1/2 tsp garlic powder
1/4 tsp salt
1/4 tsp pepper

If you want it hotter add 1/4 tsp of chipotle powder or even red pepper.

Melt butter and add chili powder (I use fiesta but use whatever kind or mix you want), garlic, S&P. Mix and cook on low heat. This can scorch on high heat so be careful. Add flour and cook for another minute or 2 on low heat to cook out flour taste. Add water and whisk until thick. Add salt to taste. You can add more butter to smooth out if you want. Add more water as needed if you want to thin it.

A long time ago, I wanted to try to emulate the chile sauce they have on the side at Berryhill's and came up with something very similar to this off of taste and experimenting. I do this plus some chile con carne (red) if we are having tamales.
