If they are large, yes, because they won't chop up in the blender or food processor before you liquify everything else.

The tomato centers are what makes up most of the liquid for the salsa. If you want a "drier" salsa, you should just keep the outside 1/2 inch or so of the tomatoes and discard the middles. However, I definitely do not core them as I want a chunky-liquid salsa.
