Howdy, we had our Thanksgiving at the Country Club. One of the dishes was blackened fish with Pontchartrain Sauce. WOW!!! Stealing a line from Guy F, 'You can put this stuff on a flip flop', it was that good. Asking for recipe for this incredible sauce!!

Pappadeauxs pontchartain sauce

Haven't tried this recipe but I found one for their Yvette sauce that was fantastic.

You could use store bought seafood stock if you didn't feel like making homemade shrimp stock.
