My general thought is any pork loin recipe that is stuffed with a meat farce isn't worth eating, as the pork loin on the outside has to be cooked beyond well done to get the meat on the inside cooked to a safe temperature. Vegetable or bread fillings are a different story.

To break up the usual cream cheese and jalapeno stuffing I have done chorizo, pineapple jalapeno jelly, and raspberry chipotle stuffing

I stuff mine with boudin, season with my bbq dry rub, wrap it in bacon and smoke it.

Cut it into 1" slices. Shake on some Tony Chacheres. Put some cream cheese and a slice of jalapeño in each and wrap with thin cut bacon and secure with 2 toothpicks. Put them in a 9x13 pan and sprinkle on some brown sugar. Then, dash some worchestershire over the top. Be generous with the brown sugar and worchestershire. Let sit in the fridge for an hour or so. Grill on each side for about 15min per side until bacon is done.
