Did a mimic on the Leroy and Lewis beef cheeks today:

Came out amazing. Super fatty, super beefy. Seasoned with Chupacabra Brisket Magic, smoked to ~170*F, then confit in a mix of tallow and ghee.

Love some smoked cheeks. They have so much collagen, that they come out almost sticky. So good.
