We are wrapping up a kitchen remodel and I am looking to replace some of our old kitchen "stuff" with new things. Is there any gadget/utensil/cookware that you would highly recommend everyone have in their kitchen?

I love my Made In pans, knives and wine glasses.
Beautifully crafted and durable. Use 'em every day. Not cheap but not the most expensive, either. Used by tons of chefs/restaurants.

There was a thread posted here not too long ago that had a lot of good recommendations.
I'll second Made In. I have their 3-quart saucier, and it's a workhorse. In before someone else suggests a Thermapen.

When our Kitchenaid stand mixer crapped out I replaced it with a Bosch. This thing kicks the Kitchenaid's ass
