Immersion blender?

What do you use one for and how often do you use it?

I have to this point in my life never used one and a Costco sale on a Cuisnart immersion blender has me wondering whether I should add it to my kitchen tools or whether it's something that will just take up space.

To this point I use a small food processor to chop and grind things like chimichurri and pesto, and a blender for bigger quantities like a batch of salsa.

I got one last year as a gift and the only thing I've used it for was tomato soup that I've made twice since. Gotta be careful pulling it up out of the pot while still holding the trigger.

If you ever need to cook a lot of scrambled eggs, you can use it to beat the eggs. Mine came with a whisk attachment along with the regular blender attachment.

Soup, marinara sauce, salsas, homemade mayo and I use the mini chopper for small jobs that aren't worth getting the food processor out for

The main thing I use it for is soup. My wife and kid aren't big on chunks of veggies in soup so it does a great job getting it all to a smooth consistency. I also have a Cuisinart one and it's nice because it has 2 speeds so if you're mixing something in a smaller container or jar you can use it without risking food going everywhere. Now that cold weather is closer I use it a lot more often. It's nice to be able to blend without taking your food out of the pot and put it in the blender.

2 minute homemade mayo was a game changer for me. I've always despised commercial mayo but the homemade stuff is incredible. Worth it for that alone.

Soups and sauces mostly. I actually make a "smooth" gumbo by blenderizing the veggies in some of the stock after sauting them - makes it really rich.
